for dinner tonight, i am having vegan fish fillets, rice and brussels sprouts 

i like this vegan popcorn that's called angie's boomchickapop sweet & salty kettle corn 

now it seems a bit redundant to call popcorn vegan but it isn't always because sometimes people add animal products to it like butter, white cheddar, etc. 

anyway i think this kettle corn costs somewhere between 3 to 4 USD 

one bag has about seven servings 

and it only has four ingredients: 

popcorn, sunflower oil, cane sugar and sea salt 

with it being popcorn it's a good source of whole grain 

if you've had this popcorn before, what did you think of it? 

today i made a cheap vegan lunch which consisted of chili and scalloped potatoes 

the chili was the easy part because it came out of a can 

the kind i decided on was nalley vegetarian chili 

despite the name i think it is actually vegan because i didn't see any animal products in the list of ingredients 

the potatoes were a bit harder to make 

it was my first time making scalloped potatoes 

i made them with garlic powder, olive oil, onion powder, rosemary and vegetable oil 

no salt was needed because i ate them with the very pre-salted chili 

all of this stuff was pretty inexpensive 

if i remember correctly the 10 lb bag of russet potatoes was less than 3 USD 

and i think the can of chili was between 1.15 to 1.30 USD

i think the other stuff was bit more expensive but a little of each goes a long way 

so i think it's all pretty cheap per ounce which ultimately makes an inexpensive meal 

i still have two more cans of the same chili and a ton of potatoes so i think i will eat this a few more times this week 

if i get hungry before dinner tonight i might stir fry some asparagus, broccoli and zucchini
